Being on vacation, I’ve been trying multiple formula’s from my school days years ago, rummaging from a gazillion bread spreadsheets – some from bakers I once bothered till they’d give up some bit of secret information, or something to give me guidance. And hope. What a great way to spend my days (and nights) off from work.
It seems I’m always on the verge of dreaming of bigger bakes. Exciting nights on floury shifts with the music of dough in the bowls mixing. The symphonic arrangement of cutting dough, scaling, shaping. Sounds that are lovely, even if the work can be hot and physically taxing. Yet, with all the physical and monotonous processing, you get the ultimate satisfaction in the final hours, seeing the bread come out of the ovens, the crackling of the crust, the smell permeating throughout.
Anyway, here’s my load for a week of baking, I’ll be going at it again and again!
