Tropical Fruit Sorbet

Went out to Flushing, Queens for Chinese lunch noodles; so hot and spicy you need fruit to cool down afterwards. On the way home I stopped for some papaya as well as dragon fruit. But then they turned out to be tasteless (opposite of the noodles), so I pureed them into summer sorbets. When chilled, a bit of sugar syrup, glucose and citrus can turn flatness into pure pleasure.
