Doughnut, krapfen, or graffe, whatever they’re named are, to me, air balls. At their best, anyways, they are playful, cheerful treats. Welcoming both play and cheer, I put together a batch using a formulae from Ian Lowe’s amazing shared cache on instagram. Unfortunately, the first try lacked play or cheer, maybe because, in my impatience for the final results, I added soft butter rather then melting it. The results were under-proofed, the sweaty butter  sabotaging a lovely crisp but the insides were undercooked.

Back to stirring the pots, this time I substituted olive oil with a more refreshed lievito madre and gave it a long bulk proof of 48 hours. Voila, perfect air balls, their sweet background notes full of play and cheer.
