Pizza is probably the world’s most popular food. Becoming a paid “pizzaiolo” only came recently due to a change in jobs. At my last workplace for a private member’s club, I experimented with pizzas as a passion, baking pies for staff meals and special events for guests. Now more happily placed at the wonderful Sullivan Street Bakery in NYC’s Chelsea neighborhood, they have me baking pizza regularly for all our customers.

Sullivan Street Bakery was founded by James Lahey, the man behind “no knead” bread. Since Jim hired me last autumn, he gave me the opportunity to dive into daily creation of pizzas. Honestly, it’s something that challenges me – and my great staff – to perpetually deepen our skills in the art of creating great pies. Things seem to be working.
Recently we were featured on Instagram. Anyway, I count this job and opportunity with pizza as one of the highlights of my career. Come try us here. Mangia!
