John Downes #repost

John Downes can be considered the father of the Australian sourdough bread movement.  I was introduced to him by bakers Graham Prichard and Dan Lepard. Downes has published multiple articles and books, celebrating food and baking history, as well as culture. It’s an understatement to say that I’m a big fan. He’s terrific.

We are reposting an interview John gave to Stir the Pots from back in 2008. It has been 15-years but we thought it worth a repost. Today John can be found on Instagram. He also has an excellent blog where he shares much about the history of bread. Please let this interview serve as an introduction to this remarkable baker.
