New Zealand-born Peter Gordon was the co-owner and head chef of London’s Providores and Tapa Room. The BBC once described him as “the leading light of the Antipodean fusion-style of cookery,” a British way of describing folks from Australia and New Zealand. Between Brexit and Covid, Peter decided to return to New Zealand and open a new restaurant, the appropriately named Homeland.
Today, besides creating great dishes in his kitchen, he also uses the restaurant as a cooking school, and is one of the television hosts on New Zealand’s Great Kiwi Bakeoff. We had a chance to to interview Peter back in 2005, meeting him through Brad Farmerie. this interview with Jeremy, he talks about the joys of a 24/7 life as a chef, the dangers of blowhards in the kitchen, and his sympathy for the delicious animals he cooks.
