Flammekueche is an Alsatian flat bread composed of a flaky, pale white crust which is singed and its edges browned. Though legally part of France, Alsace has strong German roots. Maybe that’s why some would call this baked goodie “German pizza,” as it comes with toppings such as creme fraiche, onions, bacon or ham.
I’ve thought of baking it, as it never shows up on these shores. Here is a source of reference point that I used, doing it with a sourdough twist. After mixing some dough, I let is sit retarding in my fridge until finally putting it together for a great summer dinner.
