Clafoutis Tart

Summer just started for many people, but at work, our season is now winding down. Soooo? Well, it inspired me to buy that sensually iconic fruit that captures the lusciousness of summer. Cherries! And then? Well, then I brought out the sablé dough and lined a tart ring and then I whipped up some clafoutis filling and then filled it with those delicious, round, fat dark red berries. My sous chef asked about me leaving in the pits, to which I told him, “it’s how my mother raised me,” cause she was born in France and that’s how they do it there.  Turned out great.

    Oh, yum! I like seeing how full of cherries it is supposed to be. I always have some doubts: too much? Not enough? It looks so delicious!

    Hi Laura, never enough, the amount is spot on, the filling just right…In fact I’ve done it with blueberries too and there’s a version similar with kiwi!
