Panadero Clandestino-Thierry Delabre

Taking Thanksgiving to visit Paris, I fulfilled a dream, visiting my hero Thierry Delabre’s Panadero Clandestino. Getting to his shop, I tried to capture a photo of him through the window. It didn’t work. So I went in to say hello. We actually first met on Facebook, using that online platform to share photo’s and messages about baking and bread. 

It was a treat to visit him. While Thierry moaned about the volume of his loaves, and trouble with levain, he also was excited by a future promise to move into “bigger digs” and expanding his crew. And his breads? Amazing. Watching him bake was an honor. Bravo, Thierry!
