Duck Terrine

This past weekend, a dream came true. I finally met Rachael S. Mamane, author of the excellent cookbook, Mastering Stocks and Broths, and was invited to cook for her. Facebook friends introduced me to this wonderful chef who lives in Oaxaca  Mexico. Coming to New York, she asked me to make some terrines for her east coast book launch. Flattering, no?  So I pulled out my “sous vide” and “circulator,” then went to work. I’m not sure it was as good as Rachel’s book, but it was righteous tasty!
