Testing Pizza

The pre-memorial day annual Spring Fling is approaching. It’s time to test pizza dough. And the winner is a biga fermented dough. Now I just need to get my second oven to maintain the correct temperature. Here are my latest pies.

    What temperature is you oven?
    Unfortunately most people can only bake at 250ºC

    Hi Juan,
    This is actually a boiler oven, so we can bake up top, but it can be hazardous! The lower broiler we put a Bakingsteel and heat it for some time…then wish…quickly top bake, then finish pies on top…it’s ghetto pizza style!
