Losing a man in the kitchen at work, my schedule is already a battle. With few hours to spare, do I bake and lose sleep? Do I not bake and lose inspiration? As the saying goes, “I will sleep when I’m dead.” Aiming high, I went for Ian Lowe’s sourdough brioche, again. Short of butter, I adapted the formula for olive oil. Left in the fridge overnight, in the morning there were no signs of life. So I remixed, set it into my loaf pan, and boom, the next morning it crested. With too much dough and stuck in the pan, I hacked off the excess with delicious results. All to say it’s taking me time to totally “get” this sourdough procedure.
